Fruit Pizza


Fruit Pizza is a family favorite of ours. 

It is so refreshing and a great change from my usual cake and cupcakes.  What it is:  a creamy, smooth sugar cookie topped with a perfect frosting of equal parts Cool Whip, cream cheese and sugar.  Top with your favorite fruits and it's sure to be a crowd pleaser. 

And one of the best parts is that it's super easy to make!

Fruit Pizza

2/3 C. sugar
1/2 C. butter, softened
1 egg
1/2 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking powder
1 1/2 C. flour
assorted fruits of your liking

Cream together sugar and butter.  Add egg and vanilla and mix.  Add dry ingredients and mix until just soft-don't over mix or play with dough or it will get tough.  Roll out dough and press into a pizza pan or cookie sheet.  I have also made cookies with this recipe.  For the pizza bake for 12 to 15 minutes at 350 degrees.  do not cook until it is brown.  It should be a nice creamy color. 

Frosting

1/2 C. Cool Whip
1/2 C. cream cheese
1/2 C. sugar

Mix together Cool Whip, sugar and cream cheese.  Spread over cooled pizza crust.  I like to first blend the cream cheese and sugar and then whip in the cool whip.  Garnish with fresh fruits as desired. 

I like to cut strawberries into little rounds to look like pepperoni.  You could even shave some white chocolate to look like cheese!  You can either decorate the whole pizza to your liking and put all the desired fruits on right after frosting, or you could leave it frosted cut into sections and let everyone decorate their own.  They can personalize it to their liking!  The possibilities are endless.
