Simple Peanut Butter Balls



I'm not even kidding when I say I could eat a dozen of these, easily!! They are so simple and delicious!  I made these for Emma's 3rd birthday party and they were a hit.  If you're a chocolate-peanut butter lover like me, make sure to give them a try. 

Simple Peanut Butter Balls

1 C. creamy peanut butter
1 C. powdered sugar
4 T. softened butter
2 C. graham cracker crumbs (more or less depending on how crunchy/creamy you like it)
1/8 C. semi-sweet chocolate chips
1 tsp. shortening

Add the peanut butter and powdered sugar to the mixing bowl and cream it with the butter.  Mix it until smooth.  Then, mix in the graham cracker crumbs-if you prefer it more crunchy add the full 2 C. if you like it more smooth try about 1 1/2 C.  I use a cookie scoop to form my peanut butter balls, place them on a baking sheet covered in aluminum foil. Then pop them in the freezer while you melt the chocolate chips.  Melt chocolate chips and shortening in 15 second intervals.  Grab your peanut butter balls and a fork and go in back and forth motion to make a drizzle with the melted chocolate.  I've tried dipping them all in chocolate and that's amazing, but the drizzle is so fast!  Keep in freezer or refrigerator before serving.  Try not to eat them all!
